Blokorezka for meat - are intended for crushing of the frozen meat blocks. Use of blokorezka allows to begin quicker meat processing without expenses of time for defrosting of raw materials. Besides when passing raw materials through blokorezk the meat fluid remains in product longer time that keeps gustatory qualities of meat. By production of uncooked smoked sausage temperature of forcemeat should not exceed-2 degrees, and here not to do without sausage meat mixer. Blokorezka is intended for crushing of the frozen blocks of forcemeat, meat, salted pork fat, etc. on pieces, slices of irregular shape on production of half-finished meat and sausages with temperature in the block - 20-18 C.
