This coffee comes from the Haltenango region of Chiapas state, located in southern Mexico, on the border with Guatemala.
Jaltenango is located southwest of the center of Chiapas, in the municipality of Angel Arbino Corso, near the capital of the municipality, the city of Jaltenango de la Paz.
Washed processing is carried out with manual pullers by the farmers themselves, if they are small, and at the washed processing stations that large farms have. Washed treatment requires a lot of water, so treatment stations are usually located near water sources - tributaries of the Haltenango River, for example.
Dried coffee on the patio. The largest farmers have mechanical dryers.
The temperature in Haltenango ranges from 13 - 14 degrees in the coldest season to 37 - 38 degrees in the hottest season. 2300 mm of precipitation falls annually. The trees are 15 - 35 years old. Coffee grows in the shade of other trees.
Most of the manufacturers are small and medium sized. Coffee production in Haltenango has enabled small and larger farmers to improve their living conditions and invest in the infrastructure they use. They are located near a nature reserve. Small producers are organized into groups and cooperatives.
